Citrus fruits like oranges and grapefruits provide vitamin C, which combats eye damage from aging. Nuts and seeds, including almonds and chia seeds, offer vitamin E, protecting eye cells from free radicals. Colorful vegetables like carrots and bell peppers are high in beta-carotene, vital for good vision.

Recipe 1: Spinach and Salmon Salad

Ingredients:

  • 2 cups fresh spinach
  • 1 salmon fillet, cooked and flaked
  • 1/4 cup sliced almonds
  • 1/2 avocado, sliced
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

In a large bowl, combine spinach, flaked salmon, sliced almonds, avocado slices, and cherry tomatoes. In a small bowl, mix olive oil and lemon juice. Drizzle over salad. Season with salt and pepper to taste. Toss gently to combine all ingredients. Store the leftover salad in an airtight container in the refrigerator for up to two days. Keep dressing separate to maintain freshness.

Recipe 2: Citrus and Avocado Quinoa Bowl

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 orange, peeled and segmented
  • 1/2 grapefruit, peeled and segmented
  • 1 avocado, diced
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chia seeds
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • Salt and pepper to taste

Rinse quinoa under cold water. In a medium pot, bring quinoa and water to a boil, then reduce heat and simmer for 15 minutes until water is absorbed. In a large bowl, combine cooked quinoa, orange segments, grapefruit segments, diced avocado, feta cheese, and chia seeds. In a small bowl, whisk together olive oil and lime juice. Drizzle over the quinoa mixture. Season with salt and pepper to taste and toss gently.

Recipe 3: Carrot and Bell Pepper Stir-Fry

Ingredients:

  • 2 medium carrots, sliced into thin strips
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1/2 tsp ground ginger
  • Salt and pepper to taste

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add carrot and bell pepper strips to the skillet. Stir-fry for 5-6 minutes until vegetables are tender-crisp. Stir in soy sauce and ground ginger, cooking for another 2 minutes. Season with salt and pepper to taste and serve hot.
